Evelyn’s Banana Bread Cakes

We usually don’t have bananas going to waste in our house, the kids would live off them if they could! But today we had some extra going soft, and Evelyn has been begging to make banana bread for ages. So I grabbed an extra bunch just for her.

Only thing is… we couldn’t find the loaf tin. So we made banana bread muffins instead, and honestly? I think I prefer them this way. Soft, fluffy, and perfectly portioned.

Here’s Evelyn’s step-by-step recipe for our easy banana bread cakes, a perfect baking day with kids!


🍌 Ingredients:

• 4 small/medium ripe bananas

• 2 cups plain flour

• ½ cup granulated sugar

• ¼ cup brown sugar

• 2 tsp vanilla extract

• 2 large eggs

• ½ cup melted butter

• ½ tsp cinnamon

• ½ tsp salt

• ½ tsp baking powder


🥄 What You’ll Need:

• Mixing bowl

• Fork

• Sieve

• Measuring cups and spoons

• Mixing spoon

• Cake tin

• Paper cupcake cases


👩‍🍳 How to Make Banana Bread Cakes:

1.   Peel your bananas and mash them in a bowl with a fork until soft and sloppy.


2.   Crack your eggs into a separate bowl (just in case any shell sneaks in), then add them to the mashed bananas. Mix well.


3.  Melt your butter and pour into the banana mixture. Stir it all together.


4.   Add vanilla extract and give it another stir.


5.   Add both sugars and mix well.


6.  Sprinkle in the cinnamon and give it another mix.


7.   Sieve in the baking powder and stir.


8.   Slowly sieve in the flour while stirring continuously, this is a great arm workout!


9.   Stir, stir, stir until it’s all smooth and combined.


10.  Top Tip: If you’re doing it our way using cake cases, don’t forget to give them a quick spray or brush with a light oil before adding the mix, it helps stop them sticking.


11.  Spoon the mixture into your cupcake cases in the tin.


12.  Bake in a preheated oven at 175°C (fan) for around 45 minutes.


13. Check if they’re golden and firm, add another 5 minutes if needed.


14. Let cool for 10 minutes before scoffing.


We had so much fun making these. Evelyn had her giggle pants on and kept making me laugh! 😆 We even forgot a couple of ingredients at first (butter and baking powder), but we got there in the end and they turned out gorgeous. Even if I’m biased.

And in Evelyn’s own words, her very first banana bread attempt was… “delicious!” 🥰
